Shih-Cyuan knuckle pork







ShihCyuan knuckle pork, a good dish for year end party~





Materials:
(1) A half kilogram of knuckle pork

B seasoning sauce:
(1) 2 cups of Water
(2) 1 / 3 cup of soy sauce
(3) several pieces of ginger slices
(4) 2 green onions
(5) 6 cloves
(6) 2 Volume cinnamon (or 1 teaspoon of cinnamon powder )
(7) 1 star anise (Aniseed)
(8) 1 tablespoon of black vinegar
* 1 teaspoon crushed rock sugar
* 1 cup of Shaoxing rice wine

How to Make it:
  1. Put knuckle pork into boiling water, and cook for 2-3 minutes and turn the fire off, in the meantime, leave the knuckle pork in the hot pot and braise for about ten minutes.
  2. We don't want the the dirty blood water, dump it, and pick the residual hairs off the pork skin and have the skin craped clean.
  3. Put all of the B flavored sauce, into a big tall suitable sized heavy cooking pot and boil it and then put the cleaned knuckle pork in.
  4. have it rolled from the marinade with a small fire, cover the pot and leave the cover with small ventilation gaps open. 
  5. Slow cook for about 1 hour and add crushed rock sugar and rice wine into the pan and mix well, continue to stew cook until it become soft through the knuckle pork.
  6. After that keep cooking for about 40 minutes before the sauce gets dry, turn off the flame, and it ready!
  7.  put it on a dish with vegetable dressing around  it just like the photo shows.
  8. you are ready to enjoy the delicious dish!
